I encountered that for the first time on my last trip, while out in the sticks at a small hotel. I was out in the beer garden after a couple (so called) schwartzbiers and thought I'd try the local pils. By the time the thing arrived I had lost the will to live! It was impressive though. a creamy peak popping up over the top of the glass. I nearly asked for a spoon. The aim of the 7-minute pour is to get that creamy head though, no? So if they just poured it it'd be like any other lager, so I think their systems are probably balanaced, it's just that they work on the head for 7 f****** minutes![/quote:g3tz5bd5]
Did it taste nice though? I find it hard to get worked up about German pils. Pleasant tasting but not amazing. Maybe if it was presented properly it might make the difference for me.

The push back just gives you more control over the rate of flow. It'll still all settle out in the end, just take a little longer.

It was nice, but very sharp after the dark beers. I used to not like German Pils either, but I've learnt that there's such a huge range that it's unfair to tar them all with the same brush. So I now at least try new ones after years of saying I didn;t like them, and I have to say, my opinion of them is improving. I had a lovely one up in Münster, it was an organic Naturtrub one made by Pinkus, so it was hazy. There was a malty sweet edge to it that I really liked with the hops.. But I digress

That´s what I thought.

I just asked cause even the in-house trainning courses in Diageo for workers who are not related to marketing (ie. logistics) talk about the importance of the two pours (downward and forward motions included). Something to do, I´ve been told, with the ammount of nitro released and the quality of the head.

I'd imagine because the first pour and settle has given you your head, and the second pour is just trying to top up the glass without disturbing the head.
