I bought myself a 2001 bottle of Chimay Blue in Brussels last weekend. I cracked it open last night and had some roquefort to go with it. Lovely. I was slightly disappointed though. The ageing certainly smoothed it out and gave it a cetain delicacy which isn't present in the young beer. I was hoping for more noticable signs of ageing though. Am I missing something? Is it nicer still when it gets really old?

Don't get my wrong, this was still really good.

Yes, complete tourist trap but sold good beer. Don't tell me they relabeled budweiser or something and I naivly thought I was drinking something special

I was there back in march and though a lot some of the shop where very warm and only stored it on a shelf. Grand if you are buying dome fresh-ish beers, but for something like a 2001 I would like it to be store in a cellar or cooler controlled temp

How much did it cost?

I've always thought it was a pretty underwhelming beer, so much better stuff out there...

I had a two year old bottle a couple of months back and it was good.... but not spectatcular

I have absolutly no idea how much it cost. I was pretty hammered at the time.
