I did it the night before the snow fell this year. Started fermenting after 2 days and finished in 2 weeks. Funny funky aroma; didn't go sour, though.

Need to rack it for secondary now and properly try it.

The finished product seeing the inside of a bottle is a tough one to predict as the ammount of time required in the barrel is unknown. Though I plan on driving to belgium in the summer and then adding it to the barrel with the fruit as soon as I get it home.

I have read that the Blueberry Lambic only requires 1 and a half months before its ready for bottling however after my discussions with Hanssens they have told me that the average for kriek and framboos is 4/6 months but it can be twice as long!

It will be down to me constantly tasting it which will be a tough job!

The blackberries will be sorced locally from a fruit farm, for 230 liters it will require about 50kg of fruit.

If its a success I will sort out you guys first!
