What is this taste in some ales/some batches of some ales? I don't think it is oxidation, I get it off chestnut mushrooms also. Is it infection or fungus of some kind? Is it yeast? It is driving me mental not being able to identify.

Seems to feature in ales on the maltier side more frequently.

Why would its presence in mushrooms rule out it being oxidation?

Oh, THAT should have been a full stop.

I don't think it is oxidation because oxidation to me tastes different, sweeter. This is a dry fustiness.

I don't have another answer, though. Could there be different sorts of oxidation flavour? A stale malt one vs a splashed beer one?

I remember Brendan from Feral Brewing[/url:38c45h2h] talking about hot side and cold side (or something of that nature, I remember thinking it sounded like air/landside) oxidation.

I am really keen to know what causes it as it is mouth numbingly bad

If you tell us what beer you find it in, we could all go and find out. Those of us who'll deliberately buy bad beer, that is.

Mind you, my missus and me both use "musty" to describe an off flavour we sometimes get in yellow lager, but we [i:239li0r5]never find it in the same yellow lager as each other[/i:239li0r5]. I think some of taste is just genetic.
