Force-carbonating might help speed things along, certainly. I'd be inclined to make it ASAP and decide at Christmas whether it's ready to drink or not.

Ok, I've just put my order in for delivery tomorrow, so will get brewing tomorrow. What's the worst that could happen!

This will be my first brew in a few years, and have only done largers and ales before. I'm having a go with a stout with this recipe from thehomebrewcompany.ie (who I also got my corny keg from). Getting quite excited about getting this on now.

Extract Stout Recipe

To get 23 left in boiler you multiply 23 x 1.15 to allow for 15%
evaporation during boil. So 26.5L needed at start of boil. Steep grain
in 4 L, rinse with 4L. So 18.5L needed in boiler along with 8L from
steeping grains.

Recipe:

500g Black Roasted Barley
120g Chocolate Malt
230g Wheat Malt
2.4Kg Dark spray malt
280g Black treacle
32g of Galena at 60 minutes (12.6% AA)
Yeast Irish ale 1084

Thanks for all your responses and suggestions. I should have posted up a message here before deciding what to brew.

Beginning to think that I should stall the digger on having it ready on such a tight timeline. No one likes deadlines and I'm sure this stout is no different.

I'll go ahead with the brew tomorrow evening, but will try to have the self restraint to wait until a couple of weeks into 2010 before sampling it. How long do you think I should leave a stout like this in the secondary?

For normal gravity beer don't do the secondary, 2-3 weeks in primary and then bottle or keg
