I realize this isn't exactly a "food pairing" but I just tried a little Russian Imperial Stout over vanilla bean ice cream and it was AMAZING, so now I'm starting to think about what other beer/food pairings make each other better...

Anyone have any good resources they can share?

The Brewmaster's Table is an interesting read for food pairings

Appetite for Ale[/url:1aqrw6kt] is very good. It is more of a beer and food cookbook then a matching book but there is some matching in it as well.

Also because all the recipes have beer in them it really persuades you to cook more[/url:1aqrw6kt]
