I just bought a few beers and have decided to test my willpower by aging some of them. <!-- s:D --><img src="{SMILIES_PATH}/icon_biggrin.gif" alt=":D" title="Very Happy" /><!-- s:D -->

I was wondering if any had any tips with regard how long I should age the following;

Porterhouse Celebration 7% and 11%

O Haras Leann Folláin

Orval

Sierra Nevada Bigfoot Barleywine 2013

Anchor Steam Old Foghorn Barleywine

"Special Export" by a rather well known Dublin brewery (Don't hate me! <!-- s:oops: --><img src="{SMILIES_PATH}/icon_redface.gif" alt=":oops:" title="Embarassed" /><!-- s:oops: --> )

I also have a meantime chocolate porter and Robinson's Old Tom Chocolate Ale. Although these are 6.5% and 6% and have read that 7% should be the starting point.

Any tips or personal experience would be greatly appreciated

Nice haul! Often its best to try everything fresh before aging, but failing that:
Orval apparently best 12 to 18 months
Bigfoot less brash after a year
Stouts probably last a few yearsa

Rule of thumb seems to be that malts age a lot better than hops which should be drunk relatively fresh.

This is very true, and IPAs should be drunk fresh (see also: Stone Enjoy By) but barleywines have enough strength and depth to age well.

Bigfoot in particular has a bit of a following for drinking several years at once to see the changes - google "bigfoot vertical"

Last years SN celebration is 5 for a tenner in Drinkstore.

It always gets mentioned in aging threads so just thought I'd mention that.
