The first brew I did I estimate an evaporation rate of 12%. The second one I'm not so sure, but possibly around 10%. It depends on when you record the initial volume <!-- s:D --><img src="{SMILIES_PATH}/icon_biggrin.gif" alt="

Here's a thing. In BeerTools Pro it has the initial kettle volume at 100C, and then a final volume. Should that initial volume be just the water, or the volume after DME is added, which can equate to a couple of litres. So, last brew, I had 26 litres of water in the boiler, but after adding a couple of kilos of DME this went to around 28l. I ended up with 23l in my fermenter, and almost 2 left behind to gunk, meaning I may have gone from 28 to 25, a drop of 10.7%.
I assume the total volume with DME is the one to record. Much easier with allgrain!
The high rate could be simply from the large surface area too. The thing is, I don't seem to get very heavy foaming in the initial stages. It dies away quickly. But then, that could be normal with a wider pot.
