Wort Boiling 17 years 10 months ago #1

Did you know there are six main reasons why wort is boiled during brewing? I didn't. Thom discusses them in his newest article.

See how many you can name before you read the piece[/url:f08ec1me].

Well done HC. Thats a very good techi article and explains a process that we all too often take for granted.

I was already a bit worried about my new boiler, and not seeming to get a [i:3gd4kf98]really [/i:3gd4kf98]rolling boil with the lid off. Now I'm more worried!

I think I might have to fashion a lid with a flue and trap, or if I find I don't get a 10% boil off, see if Brouwland will take it back, quoting your article as proof

10 - 15% seems to be the figure quoted by a number of brewing sources. The main worry at less than this would be colloidal instability and haze problems, but for home brewers this isn't a major concern because we don't filter and invariably suffer from chill haze.

Pro brewers want to ensure they get all the break and haze material out during boiling and filtering so want the best boil possible. Even if we managed the perfect boil our beer would still haze when chilled down cold.

Are the pre hopped kits pre boiled so, if you boil this pre hopped extract will you degrade any hop aroma and make the wort more bitter than intended. I used to boil all kits but did one today with out boiling the wort and intend to add the packaged hops in the fv, the pack was opened slightly so I presume I'll need to get some fresh stuff.
Any tips on which to use.
I'm still a novice on kits and dont know my hops, yet.

I know this is not exactly the same topic as building your own extract, but it's similar

no, isomerization has happen and extended boiling can in theory degrade the isomerized acids, making it less bitter
