The time a post is made seems to be an hour ahead at the moment!

You can adjust the timezone in the User Control Panel > Board Preferences.

You want GMT with the Daylight Savings switch set to No.

So i have to change the website everytime the clocks go back and forward, why doesnt it do that automatically like every other site?

Dunno. Makes sense to me: not every country changes at the same time.
