I was talking about why [i:i02v8vzd]homebrewers[/i:i02v8vzd] should invest in plate chillers. There are all sorts of other concerns at play on a commercial scale. Plate chillers work great once you have the right systems in place (e.g. the ability to whirlpool effectively, the use of industrial filters, pumps, etc.). This is very far from the standard homebrew setup.
