Nigel, I think you can use whatever you have handy. I had neither and I also wanted to get some gypsum and there's an Asia Market in Ballymount, D12.

Richie recommended bit by bit in his blog, and I think he's right! I lobbed it all in and I was boiling and stirring forever.

I've used gelatin plenty of times, and it's fine. The main pro of agar is that it has a higher melting point, but that hardly matters if you're keeping them in the fridge

that said, I was less than patient with 'bit by bit' I added it all fairly quickly, and it took a good time to dissolve. That said I used twice as much as tube! My slants were pretty firm though! I also chopped it in so it was going in in small pieces

I went to the asian market today (thanks richie for the blog post, I had forgotten that one exists and couldn't find agar in the other ones) I got powdered agar, 25g for €1.20, not bad... Hopefully it being powdered will mean it dissolves better than the cling film everyone else seems to have tried! It'll be a while before i get to use it so I'll update ye whenever that happens!

powdered agar eh? can you post a pic of the packet so I know what to look for? powdered sounds handier.
