I will make sure to rehydrate them well before use - and have a back-up <!-- s:) --><img src="{SMILIES_PATH}/icon_smile.gif" alt=":)" title="Smile" /><!-- s:) -->
I don't see how a dried product could be rendered unusable soon after its use-by date. I am also doing a 15 litre batch so will need less viable cells to kick off.

Do you think that dry yeast needs to be refrigerated? It seems unnecessary (but I still put them in the fridge when I got home) <!-- s:D --><img src="{SMILIES_PATH}/icon_biggrin.gif" alt=":D" title="Very Happy" /><!-- s:D -->

The weiss seems simple enough how did the hop additions turn out?

I will also have some Caramunich and Special B left over from the Belgian Brown. How about a Dunkel?????

If your looking for a typical weiss, the hops aren't much of a part of it anyway. You could of course up the hops considerably if you want a hoppy version!
