We'll just say my beer is going to be a tasting lesson in what flavors wild yeast can produce. There's some ethyl acetate ("nail polish remover") -which I reduced by boiling a gallon which also reduced my ABV, obviously, and there's also some wild yeast phenols (the "bandaid" variety).

We should definitely add my beer to the END of the list. The aroma and first 3 seconds of flavor is great; then the ethyl acetate kicks in and then the bandaid phenols...


Lesson Learned: Pasteurize That Honey FIRST! Don't just add it to the secondary unpasteurized!
