Please keep me in mind for a visit to the Hooker brewery in Roscommon. I may be down there on a weekend (I often am). I have to say, I wouldn't get too excited about pubs in Roscommon town though!
One drawback with staying in Roscommon Town for a Hooker Brewery visit is you won't get to sample the goods afterwards. Staying in Galway may be a better option (and if you do decide to do a day trip, transport out of Galway in the evening would be easier)
