Make a classic French Onion soup with beer as part of the stock base (not too hoppy: like Ale/Stout/Red) and just add some cheese cubes (like Stilton/Camembert/Cheddar or whatever) and enjoy with a good rustic (spent grain) bread.

Right, I've organised a brewery tour with a difference. We are getting a sneak preview at the first new brewery in Kilkenny. No one else will get to see it until the official launch on the 30th.

Called Sullivan’s, we will meet at [u:2tegbefs]The Taphouse[/u:2tegbefs], 16 John Street, Kilkenny on Saturday at 2pm. We will meet Master Brewer, Ian Hamilton along with their MD, Alan Quane.

Aaron, I see you might not be there until 3pm. I'm checking to see if I can have a later time but I can't promise anything. Will update if that's possible.

Anyone living in Kilkenny who wants to come along, let me know so I can pass it on to them.

OK the best they can do is 3pm so hopefully Aaron, you won't miss too much.

Just to add, I called them there and they do take reservations though probably not necessary for a non bank-holiday weekend.
