I'm good for most weekend, Are there any pros/ cons of any location, like do any need to be booked in advance?

Mullingar has the fact that it's close to Mullingar but not walking distance. A taxi would be needed each way. Mullingar has a few decent spots.

Redcross has nothing else other than an onsite brewery that does very good beer.

Kilkenny is 15-20 minutes walk from the city centre and plenty to do there.

In Kilkenny's favour- some great places to eat, including Campagne, The Bula Bus at Billy Byrnes pub (decent number of craft taps here) and Paris, Texas (try the Beer and Cheese soup). The Wine Centre is a very good off-licence (Beoir badged too). And if you like historic buildings (especially churches, Kilkenny has the most churches per square metre of any city in the world).

Oh, BTW, Billy Byrnes does a very decent breakfast burrito...

I've been looking for a good Beer & Cheese soup to try, I made my own once but came out a bit too salty.
