Cask beer management is easy peasy:

1. Have a supplier/cellarman/manager that knows what they are doing (ie. making the stuff in the first place, Stillage and storing temperature and tapping. Oh!!! and BTW: Line cleaning/pump cleaning/sanitation/Dispensing glasses quality and cleanliness etc.)

2. Have bar staff who have been trained/informed/told how to pull the stuff, what it [u:1obfd6h0]should[/u:1obfd6h0] taste like when good and to also recognize when the cask is going off.

3. Sell the stuff quickly! or F**k Camera use a cask breather and cool cask/lines/cellar like Keg

A while back in Messrs (before the NAMA lark) I was there on a Thursday and they just tapped a cask of their APA and it was sublime... anyhow, I went back in the following Tuesday and asked for a pint of it. Glad to report the dry hopped Metalman at The Brew Dock last night was delicious!

You'll start to see a marked decline in quality after 4 days. After 12 days you'll be getting a lovely pint of vinegar

10 to 12 days on a breather should be fine, I'd have thought. 3 to 4 tends to be what people say about non-breathered beer.

Tbf Beamish ( before the buy out) wouldn't leave a keg of nitro stout in a bar for more than seven days. Even with a breather on a cask, I'd be wary after a weekend
