I'll definitely give that a whirl... Like the sound of it. Less is more with carbonation, I can only stand it in Weissbiers..
Slightly off-topic but I see you've a kit lager fermenting? I've not brewed one but I thought lagers were a 'no-no' for the homebrewer... with the lagering process being beyond the reaches of your average set-up. Have you brewed it before and how did it work out?
