Even if they aren't using conicals, they find a way of removing a great deal of the yeast.

I always find siphoning transfers a bit of yeast

Also commercial lads will chill down the fermentors to help clarify, something a lot of homebrew cant do

Yeah, cold conditioning is pretty much essential to ensure excellent beer clarity. Everything drops out if you can get the beer down to around -1 C.
