I quite like Chimay (blue and white), if it's not served ice cold as most Irish stockists seem to think it should be. They don't use brettanomyces though Biertourist. Orval is the only Trappist beer that does that, as far as I know and that is a taste I acquired quite a few years ago.

Of course Sean you are 100% right. I was seeing the fish with the ring in it's mouth and THINKING of Orval and it's fortress-like building in the mountains when I said Chimay.

No Brett used in Orval.

I like the Chimays too. Hoegarrden doesn't taste of a whole lot really. I've gotten it with big lumps of lemon in it. I presume thats supposed to help it.

Cantillon make some lovely beers but can't be got around these parts. They've got unique flavours and they're not for every one but that's the way with everything.
