But why would 1x 1000 litre vat produce a more consistent flavour than 10x 100 litre vats, if they come from the same initial production run? Surely they should be identical tasting?
And you could argue that it would be actually better to do 10x100 in case of spoilage, you'd lose only 100 litres instead of 1000.
