Our good friends at Shepherd Neame are going to be providing a hands-on exhibit on brewing this year -- a demonstration of how it all works, for those who've never had the chance to visit a real brewery. It's called the Interactive Ingredients Area.

From the website, here's them telling you what yeast is:

Wow thanks Shepherd Neame! Here was me thinking that ale yeast was a micro organism called Saccharomyces Cervaise, when all along it was just an enzyme!

And the clear fermentation tower under the strong lights of the exhibition centre would get that distinctive Eau De Shepherd Neame into the beer right at the beginning, rather than having to wait for the combination of clear bottles and supermarket lights to do it's magic.
