Believe it or not, but this is also a problem in the US. I've bought boxes and boxes of beer in and around Boston and New York, and most of them were lacking that freshness that you are looking for in a good hoppy beer. I mostly now stick to local hoppy beers on draft when I'm in the US, and there are plenty of them. When I want something decent and hoppy in Ireland I bring in beer from the UK.

How long do you guys find it takes your homebrewed IPAs to lose the 'green' harshness but still retain good hoppiness?
Ive one in bottles 5 weeks but still tastes kinda green to me

It varies. I find with Nelon Sauvin it can be a couple of months.
