MDonnellan, thanks for the link. They were at the An Griannan (the rocky ring, not the theatre) festival in Donegal earlier this summer and their Bronze Age Beer is, and I don't use this word lightly, awesome.

Surely, like us (well, me) the bronze age brewers didn't care about what state the mash tun is in, so long as the fermenter is clean?

They would not have cared about a clean fermenter either. Probably the contrary. Biology (as we know it today)is a very new science and micro organisms were unknown back then.

It was godisgoode or magic back then. Today we know it was wild yeast floating around causing the fermentation. Eventually man learned to cultivate different generations of yeast after successful batches and that's where our yeast strains today come from.
