There is a guy in Headford, Galway recreating really old brews. Using Irish herbs instead of hops, and rediscovering what they got up to hundreds / thousands of years ago.

He says that they used hot stones to control mash temps. Also some kind of "hole in the ground" technique?

It is fascinating[/url:kdbnlxux] and since you live in Galway, you should get along to their headfest festival when they have it, which can be sporadic.
I went along, either last year or the year before and it was a blast. They cooked all the food in those earth pits using heated rocks, well that and roasting a pig on a spit <!-- s:D --><img src="{SMILIES_PATH}/icon_biggrin.gif" alt="" title="Very Happy" /><!-- s:D -->

I live in Headford but somehow I never heard of Headfest! is this an annual event? The website doesn't give much info
