Just to report back...
Used a cucumber sorbet when I felt my taste buds were starting to flag and then ramped up to a ginger one towards the end of the night. They worked well to refresh both the palate and the brain! I also flushed with some sparkling water, which worked much, much better than still.
By the way, both also worked to cleanse palate after fatty and acidic foods such as pork scratching, pickled eggs and cheese/crackers.
