Spent Grain Bread 18 years 2 months ago #1

hey guys was wondering if anybody has some recipes for bread using spent grains, and also how do you guys bake with spent grains, do you dry the grain first or just lump it in wet?

This one got lost in the 'Cheese wax' thread:

[quote:t4pr9xx5]My basic brown bread recipe:

1 1/2 cups white flour
1 1/2 cups wholemeal/brown flour
1 3/4 cups milk (or buttermilk or half and half milk/cream)
1 tsp bread soda
1 fistful of seeds or nuts or pinhead oatmeal. Whatever comes to hand.(sunflower seeds are nice)
Mix dry ingredients. Add milk. Quick mix (don't over do it) Into a greased loaf tin (or thicken with more flour and shape on a tray). 190deg oven for about 50 mins. or until the bottom of the loaf sounds hollow. Remove from oven and wrap in a (damp) tea towel for a softer crust.

I basically use this recipe, replacing the wholemeal and oatmeal with spent grain. Ales with crystal malt work best for me. I normally don't bother with stout spent grain, as the loaf can be a little grayish, and not as appetising looking.[/quote:t4pr9xx5]

I don't dry the grain, but you might want to adjust the milk to get the consistency right, ie gloopy. You can experiment with the amount of spent grain you add; less grain and more flour makes a lighter loaf.

And, as they say, here's one I made earlier:

OK. Next brew day I'll bake one of these. Should be no problem getting it done while I'm waiting for the boil to start.

I'll make some more, as I already ate all the loaf since yesterday, great succes, thanks for the recipe !

BTW (sorry, BITR), the word "gloppy" was first spotted in 1944. Yet another productive day.

It's a sure sign of a good night when a bunch of people can have a twenty minute in-depth discussion on the consistency of gloopy.

That "after" loaf looks a lot more appetising alright.
