Update, and request for input:

I got an email from Dundalk Bay over the weekend to say they can't open the brewery at weekends <!-- s:roll: --><img src="{SMILIES_PATH}/icon_rolleyes.gif" alt="" title="Rolling Eyes" /><!-- s:roll: --> so that bit's off. I had mailed Carlingford about booking in but they haven't got back to me. I noticed on their online booking engine that the 29th wasn't available for tours, but I don't know if that means they're closed completely or what.

So. I'm still willing to put together a daytrip somewhere on the 29th. Any ideas?

What about going the other direction?
