Let's see:

Use of water in brewing.
Slanting yeast.
Off flavours/infections- their causes and how to rectify.
Hop Chemistry. Flavouring/bittering/aroma.
"Craft". What does it really mean.

thanks Andrew, great suggestions.
The event is this February <!-- m --><a class="postlink" href="www.alltechbrewsandfood.com/">www.alltechbrewsandfood.com/
and I am now involved in one aspect of planning the event,
is there any speakers in Ireland you think would be good to cover any topics, I particularly like the "Craft" What does it mean, anyone that comes to mind for you? thanks!

That would make for a good panel discussion. I reckon Stuart Howe of Molson Coors craft division (technically in charge of Fran well) would be ideal.

Yes, a couple brewers (one established, one up and coming), a beer blogger and someone like Dean McGuinness to round out the panel.

Hi Marie, welcome to Beoir.

I attended the event last year and I thought the presentations were generally very good. It was also a great networking event. So far, based on the information available about this years event, I doubt I will be attending. The presentations and speakers listed don't seem to offer the variety of last years conference. As the owner of a new startup brewery, I would rather see more technical brewing sessions, and maybe some sessions on management operations and the day to day running of a craft brewery, from those who are doing it. Sensory sessions are simply not a big enough draw for me.

FWIW, I don't feel that this years event has been very well sold or promoted.

So who's going to this?

I'm going to the Pub Series on the Thurs/Friday and am really looking forward to it
