We want fancy.

So going by the feedback from #1 we'd be looking at a grain bill of mostly pale malt. About 5% low crystal and much the same Cara maybe. If we're looking for a decent high abv with a dry ish fg an addition of dextrose will help out.
Without knowing fancy hops for a 1.080 ish IPA any of the standard bittering hops to about 70+ and a butt load of late fancy hops will do the job.
A single specialty hop could also be a nice drawing point. Especially with all the Eastern Europe hipster hops now available.
Finish about 1.010 very drinkable IPA.

The mild was never destined for Carlow- we/they are looking for a celebration beer for the 20th anniversary. Funnily enough "big and bold~" was exactly the term myself and Seamus used when discussing it- it looks like Conor might have got the memo from management...
