You're close enough to 5 Lamps Brewery to be getting deliveries by hand so I'd suggest making a big thing of that: having it as the house beer, a tap for unique pilot brews, etc.

The Kitchen is not up to much at the moment, but pies are being tested as we speak.

The hole next door is someone else's premises with no hope of using it.

I've plenty of tap space at the moment, and will try to increase to allow all Micros a shot at sales.

There's also a spare room for meetings / tastings etc

Yes! I love pies. 13 minute walk from my front door. I see myself spending lots of time here

And proper pies, with proper pastry. Not those "ingredients in a bowl with a piece of flaky pastry on top"- I wouldn't even grace them with the name "cobbler"

We obviously don't need to educate you on beer or whiskey options.

Nice friendly staff are essential, nothing worse than a bartender who makes you feel like being in their pub is a massive chore for them.

A decent cheeseboard is always nice but I'd love to just be able to order a wedge of cheese in a bar as opposed to a selection of different ones.

Also decent music that is neither too depressing nor too heavy.

And of course, give a thought to stocking a few beers that come in flip tops. <!-- s:wink: --><img src="{SMILIES_PATH}/icon_wink.gif" alt="" title="Wink" /><!-- s:wink: --> Hacker-Pschorr wheat beer is one I'd like to see more of in Ireland.

Sunday carvery would go a long way to selling it to the family.

And for those who might be tickers (sing loud, sing proud, TBN!) it'd be nice to not have too much overlap with the selection at other craft pubs.
I know there are practicalities and only so many Irish breweries, but between B&C, the Cottage Group, and Farrington's, each always seems to have something on tap that the other two don't.

And +1 for pies.
