It used to be back in the day*... say pre 1990-1995.
Most of the people who managed Louis Fitzgerald pubs are publicans now because of it.
Not so common these days though.
Most of the pubs i know (that arent part of a chain) the owner would be involved in the day to day running so he's really the manager. The fella called the manager is just in charge when the owner is not there.

Leasing is the in thing these days.
Any good manager will always have their eye out for a good lease. This i suppose is a bit like the old days where the manager got some of the profit but with less work and risk for the owner.
I know laods of pubs that have been passed from billy to jack on lease cos an optimistic barman thinks its an easy few quid.

*Common for managers to be given a share in the profits as part of their renumeration.

Barman I once knew use to do the Deb,s shift at the Burlo,when everybody else hated to do it. When asked why he did the trainee drinkers shift he said that he wanted to help them have a good time,so when they asked for a spirit drink and soft drink top up,he would have a dish with the spirit in it,dip the rim of the glass in the spirit,add the ice and soft drink,and charge them for the full drink,he then would ring up the till with the soft drink price. This way he had no trainee drunks,his till and drink stock matched,so evrybody was happy.

I've seen a "Pimms" which was served from spirit drip tray. The barmans point was that Pimms was so rotten they'd never notice.

I also saw the free kegs in a hotel in Dublin that were provided for a rugby do, being light enough to lift with one finger...that ran out quickly.

I've always hated thieves and am happy to say that despite years in the game I never played the fiddle.
(except that time in germany when in a team it was hard not to do as there was an element of peer pressure)
