The banana flavours can be lessened by a cooler fermentation ( which given the last two winters will certainly save on the kegerator bills ) and I will certainly bee brewing some winter weissens
Also the Dunkel variants reduce the sweetness some what as the replace with the drier, darker, slightly bitter malt flavours
I am really only thinking of the classic Bayern/Scwaben wheat beers at the moment and not the other berlinner Weiss / Belgian Witt beers
